BISQUICK CHICKEN POT PIE

INGREDIENTS 

1 cup cooked chicken, cut into bite sized pieces
1 2⁄3 cups frozen vegetables, thawed
1 (10 ounce) can cream of chicken soup 
1 cup Bisquick baking mix 
1⁄2 cup milk
1 egg

DIRECTIONS

Preheat oven to 400°F.
Mix chicken, veggies and cream of chicken soup together and spread into bottom of non greased 9-inch round glass pie pan.

Mix remaining ingredients (Bisquick, milk and egg) and pour on top of chicken mixture.


Bake in oven for 30 minutes or until top turns golden brown.

  1. I neglected to tell you this easy recipe works just as well if you substitute a can of white Albacore Tuna for the cooked chicken.

    Tuna Pot Pie is very tasty and even easier to make than the chicken variety.

  2. If you want to get more creative, try cooked, shelled shrimp in cream sauce with frozen peas, or corn –– or both.

    Preheat oven to 400º

    Raw shrimp are sold already shelled, but still have thier tails on. Rempving the tails is tedious but not hard. Cook the shrimp in just enough water to cover with two teaspoonsful of chicken bouillon powder. Just bring the shrimp tp a boil, then take them off the heat. Drain into a colander and cool.

    Thaw the frozen peas, and set aside.

    Make the cream sauce by melting two tablespoons of salted butter, Stirr in two tablespoonsful of flour. Wish together into a smoot paste.Add 1 1/2 cips whole mile GRADUALLY stir over medium heat to mixture thickens. Season with S&P to taste, and a dash of nutmeg.The cream sauce should be thick. Wisk in another tablepoonful of flour if not think enough. Adjust seasonngs.

    Make Bisquick crust as in the chickjen and tuna recipes:

    1 beaten egg, 1/2 cup milk, 1 cup Bisquick blended thoroughly.

    Mix shrimp, peas and cream sauce. Pour into 9" ungreased glass pie plate or soufflé dish.

    Cover with Visquick batter.

    Bake 25-30 minutes til lcrust is golden brown.

    Adding 3/4 cup shredded extra-sharp cheddar to the Bisquick crust mixture makes it even better.

    As get older, and older "Quick n' Easy" looks better every day.
